I needed to use up the rest of my dates in a semi-speedy fashion and so earlier this week I dived into part two of my LaraBar making experiment. My favorite yummy LaraBars are the peanut butter chocolate chip flavor, so I went searching for a recipe and ended up creating my own from several that looked tasty. I came up with this...
Peanut Butter Oatmeal Chocolate Chip Bars (oatmeal - yes! yum!)
- 1 cup cashews
- 1 1/2 cups dates
- 1/2 cup raisins
- 2 tbsp. peanut butter
- 1 1/2 cups oats (I used old fashioned)
- 1/4 tsp. salt (because I used unsalted, raw cashews)
- mini dark chocolate chips
Same drill - pitted dates, chopped cashews, and then I food processed the cashews, dates, raisins, peanut butter and salt. I then added in the oats and just pulsed a few times, and then stirred in the chocolate chips (just eye-balled the amount). Pressed them out in a 9x9 pan, chilled, voila - 12 delicious homemade LaraBars!
They ended up just a tad bit on the side of too many dates in flavor, so next time I think I'll do a little less dried fruit and a little more peanut butter. Other than that, I'm pretty proud. My freezer is now stocked with LaraBars for at least a few weeks!

Yum! Those sound awesome, although I think I'm with you, more peanut butter and fewer dates.
NICE! I have some dates to use up...this will be perfect. You are keeping them in the freezer, eh? I have my bars in the cubboard, but I'm not sure how that butter is going to hold up. Good thought. LOVE YOU!
